Penicillium

Genus of the moulds with about 25 species (types), which are also called brush mould because of their shape. They love warmth and humidity, mostly have a greenish colouring and live mainly in the temperate climate zones. They thrive on bread, cheese, jams, flour, fruit (especially apples, peaches, grapes, citrus fruits), bread, fruit juices, cheese, jams and flour. Certain species are important in the food industry for blue cheese, in the beverage industry for rice wine and in medicine for some antibiotics such as penicillin. Others are used for the biotechnological production of substances used in viticulture such as pectinases (enzymes) and tartaric acid. In vineyards, Penicillium species cause various forms of grape rot, such as Penicillium expansum the green rot. Many species produce mycotoxins through metabolism, such as citrinin, ochratoxin A and patulin. See also under fungi.
