The science of the seasonal and periodically recurring growth and development phenomena of organisms. These can be seen in the annual vegetation cycle from budding to winter dormancy with the morphological characteristics or changes that appear externally. The term is derived from the Greek "phainómenon" (visible, appearance). The phenotype of a grape variety contains a catalogue of characteristic features that can be used to characterise it. The occurrence of the phenological seasons is based on the annually recurring growth and development stages of selected, typical plants. Phenology has proven to be a powerful calibration tool for climate and weather models and is used at climatological and meteorological research institutes worldwide. It is also important for climate change research. The phenological stages of grapevine development in the form of standardised codes are described under BBCH code.

Morphology comprises the classification of organisms based on their shape. In the case of vines (see there in detail), this includes the shape of the leaves, the shape of the grapes and the texture and colour of the berries, which are characteristic of each grape variety.
