The winery is located in the municipality of St. Peter am Ottersbach, in the Austrian wine-growing region of Vulkanland Steiermark. Since 2006, they have been cultivated in a completely biodynamic and sustainable manner in accordance with the certified DEMETER rules in perma-culture. The list of varieties also includes some PIWI varieties. The white wine varieties Pinot Blanc, Morillon( Chardonnay), Pinot Gris, Sauvignon Bl anc, Gelber Muskateller, Grüner Veltliner, Muscaris, Souvignier Gris, Bronner, Blossom Muskateller and Sauvignac, as well as the red wine variety Cerason are cultivated.

Ploder-Rosenberg - Weingutsgebäude inmitten Weinbergen
According to the philosophy of the house, lively, multi-layered, profound and storable wines are strived for. The biodynamic wines also comply with vegan specifications. The product range includes the "Classic", "Linea" and "Amphora Wines" lines (all of which correspond to Natural Wines). The winemaking process follows a non-invasive principle with low intervention (low-tech). The wines are matured with long ageing on the fine lees for 10 to 30 months, depending on the wine type, in large wooden and toasted starter casks (thick-walled 600-litre oak and partly acacia casks), as well as the mash-fermented, amber essences in clay amphorae (Amber Wine/Orange Wine). All wines are subject to a high degree of reduction in terms of filtration, additives (adjuvants) and sulphurisation. Various strong distillates (aged for ten or more years in wooden barrels), vinegars and a grape-seed salt are also produced.
