Popular (rather fun and not scientifically to understand) term for a wine that is drunk between flights (passes) of an intense tasting. As a result, the strained taste and olfactory nerves are calmed (neutralized) and released for new impressions. This is especially recommended for heavy, sweet and / or alcohol-rich wines.
