The "Salvioni - La Cerbaiola" winery is located in the municipality of Montalcino (province of Siena) in the Italian region of Tuscany. It was founded in 1985 by Giulio Salvioni and is now managed by David Salvioni. Attilio Paglia is the cellar master. There are two wine cellars, located in a building next to the vineyards and in the historic centre of Montalcino.

The estate covers 20 hectares, of which the vineyards cover four hectares at 420 metres above sea level. Only the Sangiovese variety is cultivated in the Cordone Speronato and Guyot varieties. All work in the vineyard is carried out in the traditional way. The yield is reduced to 25 to 35 quintals per hectare with short pruning. Only ripe, healthy grapes are processed through selective hand-picking.

The wines are fermented spontaneously with the vineyard's own yeasts in 40 hl stainless steel tanks. The wines are then matured in 20 hl Slavonian oak barrels. The flagship of the estate is the DOCG red wine Brunello di Montalcino, which is aged for at least 36 months in wooden barrels. It is only produced in particularly good vintages. In unsuitable years, only the DOC red wine Rosso di Montalcino is produced, which matures for 12 months in stainless steel tanks. Around 18,000 bottles are produced each year, 80% of which are exported. The winery is a member of the "Consorzio del Brunello di Montalcino".
