The winery is located in the city of Heilbronn in the German growing region of
Württemberg. The parental business was taken over by Elke and Andreas Hieber in 1986. The vineyards cover 12 hectares of vineyards in the Staufenberg and
Stiftsberg (Heilbronn), as well as Kayberg (Erlenbach) vineyards. About two thirds of the vineyards are planted with the red wine varieties Trollinger, Lemberger, Schwarzriesling, Spätburgunder, Dornfelder, Regent, Samtrot, Acolon, Cabernet Cubin, Cabernet Mitos, Clevner, Monarch, Merlot and Cabernet Cortis, and one third with the white wine varieties Riesling, Kerner, Rivaner, Grauburgunder and Hölder. The winery has been a member of
ECOVIN since the year it was founded; since then, the vineyards have been cultivated according to the guidelines of
organic viticulture with no use of synthetic
pesticides and
herbicides.
Purely organic
fertilization is carried out with
compost, manure and rock dust. Furthermore, a regular deep loosening of the soil and a lot of cover crop is carried out. The vineyards are constantly controlled in order to detect possible pests or diseases at the earliest stage. The white wines are fermented in a cool place at 16 to 18 °Celsius, depending on the variety, and this can extend until Christmas. They are then left on their lees for a long time (some until September of the following year). The red wines undergo the classic maceration. The storable qualities mature in wooden barrels or barriques and are then stored in the bottle before being marketed. Noble brandies (wine, apple, pomace) and bottle-fermented sparkling wines are also produced.
