The Bianco (also called Vendemmia tardiva) is blended in any mix of Inzolia, Catarratto Bianco, Grillo and Grecanico. The wine types Rosso (also called Riserva and Vendemmia tradiva) and Rosato are produced in any mixture of Nero d'Avola, Frappato, Nerello Mascalese and Perricone (for 50%), as well as other approved varieties (maximum 50%).

The Spumante Bianco is made in any mix of Inzolia, Catarratto Chardonnay, Grillo, Grecanico, Carricante, Moscato Bianco ( Muscat Blanc ), Zibibbo ( Muscat d'Alexandrie and Pinot Nero ( Pinot Noir ) pressed. The Spumante Rosato is produced in any mixture of Nerello Mascalese, Nero d'Avola, Pinot Nero and Frappato (to 50%), as well as and approved (maximum 50%).

In addition, cuvées are produced from two grape varieties mentioned on the bottle label. These are 20 white wines (eg Catarratto-Grillo) and 21 red wines (eg Nero d'Avola-Merlot). Almost all of the above grape varieties are represented in the total of 41 two-person combinations.
