Sweet

Common name in Germany (in the Mosel-Saar area also "sweet Viez") for the apple must after pressing. In southern Germany, Switzerland and Austria, this juice is simply called must (which is also used for freshly pressed juice from grapes) or sweet must. This is the starting product for cider (which is also called "sour Viez"). The word "Viez" (from the Latin vice) means "in place of (wine)", so to speak a "substitute wine".
