Term for a multi-course menu with usually five to eight courses, each with several dishes. The main purpose of this is to demonstrate the diversity of a cuisine, where a restaurant wants to show the wide range of dishes on offer or the chef's full skills. The matching wines are also served with the individual courses (see also under Wine with Food). There are also exclusive tasting menus with up to 30 dishes and more. For wealthy lovers of very old, exquisite wine rarities, the French wine collector François Audouze organises very special tasting menus (dinners). A completely different purpose is served by a professional tasting for the purpose of wine evaluation.
There is a vast number of sources on the web where one can acquire knowledge about wine. But none has the scope, timeliness and accuracy of the information in the encyclopaedia at wein.plus. I use it regularly and rely on it.
