tertiary aromas (GB)

Designation (also ripening aroma) for the aroma substances produced during the ageing and subsequent bottle ageing of a wine. Certain aromatic substances are already present in the grapes(primary aroma) or are developed during fermentation(secondary aroma) of the wine. See also aroma and typicity.
