The winery "Thymiopoulos Vineyards" is located in the municipality Trilofos Imathias in the area Naoussa in the region Macedonia (Greece). The traditional farm is today run by Apostolos Thymiopoulo, who switched to his own wine production in 2003 after finishing his oenology studies in Athens. Until then, the family had been producing and selling grapes for three generations. The first year 2004 came on the market in 2005. The vineyards cover 34 hectares of vineyards, exclusively with the red wine variety Xinomavro are planted. No grapes are purchased. The management takes place according to the guidelines of the Biodynamic viticulture, There is no thin out or other interference with the philosophy that vines should develop their own defenses and live in harmony with their natural environment.
The winemaking is done in a conventional way without modern techniques with abandonment micro-oxygenation, Pure Breeding Yeast, enzymes and filtration, Much more is the fermentation spontaneous with the natural ones yeasts carried out. The red wine "Ghi kei Ouranos" (earth and sky) comes from old (35 to 50 years), the red wine "Young Vines" of young vines. The "Rosé de Xinomavro" is aged for three to four months in oak barrels. In small quantities, the "Xinomavro nature" is produced without sulfur use is bottled. Every year around 250,000 bottles of wine are produced, of which 98% are exported. The main buyers are the USA, Canada, UK and France. Other export countries are Australia, Belgium, China, Germany, Japan, Switzerland and Cyprus.
