The winery "Thymiopoulos Vineyards" is located in the municipality of Trilofos Imathias in the area of Naoussa in the region of Macedonia (Greece). The traditional company is now managed by Apostolos Thymiopoulo, who after completing his oenology studies in Athens in 2003 switched to his own wine production. Until then, the family had produced and sold grapes for three generations. The first 2004 vintage was launched in 2005. The vineyards cover 34 hectares of vineyards, exclusively planted with the red wine variety Xinomavro. No grapes are purchased. The cultivation is carried out according to the guidelines of Biodynamic viticulture. There is no thinning out or other intervention with the philosophy that vines should develop resistance themselves and live in harmony with their natural environment.

Vinification is carried out in the conventional way without modern techniques, with the renunciation of micro-oxigenation, pure yeasts, enzymes and filtration. Instead, fermentation is carried out spontaneously with the natural yeasts. The red wine "Ghi kei Ouranos" (earth and sky) comes from old (35 to 50 years), the red wine "Young Vines" from young vines. The "Rosé de Xinomavro" is aged for three to four months in oak barrels. The "Xinomavro nature" is produced in small quantities and bottled without the use of sulphur. Around 250,000 bottles of wine are produced annually, 98% of which are exported. The main customers are the USA, Canada, UK and France. Other export countries are Australia, Belgium, China, Germany, Japan, Switzerland and Cyprus.
