The estate is located in the commune of Volkach (Maindreieck area) in the German wine-growing region Franconia
, It was founded in 1933 by the grandfather of the current owner Heinrich-Josef Pfaff. As the cellar master of the local cooperative at the time, he went into business for himself by buying the "Zur Schwane" hotel and also started wine-growing in some vineyards. From the 1960s, the business of Michael Pfaff (son of the founder) was enlarged. Since 1997 he has been managed by Eva-Pfaff-Düker and Ralph Düker. The name derives from a family of swans who ran an inn on the site of today's hotel in the early 15th century.
The vineyards cover 15 hectares of vineyards in individual locations Furstenberg
(Escherndorf), Landsknecht (Obervolkach), hell (Obereisenheim) councilman
(Volkach) and tithe count (Wipfeld). They are planted with the white wine varieties Silvaner (50%), Riesling (25%), Müller-Thurgau, Bacchus, Kerner and Rieslaner, and Pinot Noir. Particular emphasis is placed on selective harvesting and completely healthy grapes. The grapes are processed gently. The fermentation is temperature controlled in steel tanks. Beautification and filtration are only carried out when necessary to maintain fruitiness and freshness. The red wine "Fervor Oloris" (passion or embers of the swan) is made from Pinot Noir and aged for 15 months in French barriques. The Franconian classics are bottled in a Bocksbasche. Slightly vinified wines are marketed in the Bordeaux bottle. Bottle-fermented sparkling wines and spirits are also produced. The winery is a member of VDP
(Association of German quality wine estates).
