French term (German: sortieren, Triage = sorting) for a single harvesting process or grape sorting during the grape harvest, in which only the best or physiologically ripe grapes are harvested or then manually selected on a sorting table or conveyor belt. In extreme cases, only individual berries are selected, which is mainly done with noble rotten grapes for the production of sweet wines. At some wineries - such as Château d'Yquem - there are between five to ten and even more such harvesting processes within a longer period of time....
