Genus of moulds with the only known species so far being Trichothecium roseum. It frequently occurs worldwide in the soil and on dying plant material. Indoors, Trichothecium roseum is often found as a spoilage agent on flour products and other foodstuffs. The fast-growing mould shows a whitish colour, which changes to orange to reddish in older colonies. In vineyards, it causes the grape rot type pink rot (see green rot). Through metabolism, mycotoxin (poison) can be formed, which is the group of trichothecenes named after the fungus. Its toxicity is low, but can lead to fermentation problems or fermentation failures.
The glossary is a monumental achievement and one of the most important contributions to wine knowledge. Of all the encyclopaedias I use on the subject of wine, it is by far the most important. That was the case ten years ago and it hasn't changed since.
