Tyramine

The biogenic amine is produced during the decomposition of proteins as a natural product in fermentation processes such as cheese, chocolate and also wine. The substance is formed in measurable quantities almost exclusively in wines with malolactic fermentation. Possible negative, allergic effects are similar to those of histamine.
