The winery is located in the Danube-Swabian village of Dewetsch (Hungarian: Pécsdevecser) in the south of Hungary. It was founded in 2002 by Ralf Waßmann, a beverage technologist trained in Geisenheim, who runs the winery together with Susann Hanauer. The vineyards cover two hectares of vineyards on the southern slopes of the Siklós district in the Villány wine-growing region. They are planted with the white wine varieties Olaszrizling (Welschriesling) and Chardonnay, and with the red wine varieties Cabernet Franc, Cabernet Sauvignon, Kékfrankos (Blaufränkisch), Blauer Portugieser and Merlot.
The winery was certified as the first organic winery in Villány in 2003. Since 2011, the certified cultivation has been carried out according to the guidelines of DEMETER or biodynamic viticulture. This includes the renunciation of pesticides and artificial fertilizers. Pest control is carried out, for example, by beneficial inse cts such as ladybirds, predatory bugs, earwigs, lizards and birds. This is promoted by cover crop and sowing.
No technology is used in the cellar, with the exception of a small destemmer. Fermentation takes place exclusively spontaneously with the vineyard's own yeasts. The organic wines are aged differently depending on the wine style in stainless steel tanks, in traditional large wooden bar rels or in barrique. Apart from minimal use of sulphur, no additives are used. All wines are certified according to the Hungarian guarantee of origin and quality "Districtus Hungaricus Controllatus Villány" (DHC Villány). Since 2010, other wineries have been advised on the conversion to organic (ecological) viticulture.
