, Wine-growing has been practiced in the farm-oriented business for generations. After training as a chef, Martin Waßmer decided after seminars and practical experience in France in 1998 to produce wine himself. The vineyards cover 16 hectares of vineyards in the individual layers Altenberg (Laufen), Maltesergarten (Schlatt), Steingrüble (Bad Krozingen), as well as Letten and Schäf (Auggen). They are planted with the red varieties Pinot Noir and Cabernet Sauvignon, as well as with the white varieties Pinot Blanc, Pinot Gris, Gutedel, Chardonnay, Müller-Thurgau, Sauvignon Blanc, Riesling, Muscat and Gewürztraminer. Some of them are ancient vineyards on steep slopes.
Quality criteria are consistent quantity reduction and completely healthy grapes. The wines are fermented almost exclusively dry and, if possible, with natural yeasts and are stored on the yeast for a particularly long time. The maturity takes place in the style and tradition of the Burgundy wines. All red wines are aged in wooden barrels, top quality in barriques. During the maturation process, which lasts up to 18 months, the suspended matter naturally settles and the wine is no longer filtered, if possible. The exclusive wines aged in barrels are labeled "SW". The flagship of the house is the Pinot Noir "GC". Bottle-fermented sparkling wines are also produced.
