Wine soups used to be very popular, especially in better circles, and were often served for breakfast (instead of the coffee or tea that is common today). There are countless recipes, one of which is called "Drunken Virgin". The ingredients are: ½ liter of white wine, 8 egg yolks, something cinnamon, 3 eggs, 3 tablespoons of sugar, 70 grams of flour, lemon zest, clarified butter, some sugar at will. Preparation of the soup (original): Take 8 egg yolks and stir them, pour the wine on them, add sugar as you like, add Zimmet, let it boil, but always stir, then it is ready. Preparation of young batter: egg yolk and sugar are stirred until frothy, then add the grated lemon peel, the flour and finally the egg whites. Use a teaspoon to cut round biscuits from this mass, pour them into hot lard and bake them golden yellow. You take it out, drip it off and pour it with the wine soup while serving.
