Wine soup

Wine soups used to be very popular, especially in better circles, and were often served for breakfast (instead of the coffee or tea that is common today). There are innumerable recipes, one of which is called "Sodaed Maidens". The ingredients are: ½ litre of white wine, 8 egg yolks, some cinnamon, 3 eggs, 3 tablespoons of sugar, 70 grams of flour, lemon zest, clarified butter, some sugar to taste. Preparation of the soup (in the original): Take 8 egg yolks and stir them, pour the wine into them, add sugar to taste, add cinnamon, let it simmer, but always stir, then it is ready. Preparation of the maiden dough: Stir the egg yolks and sugar until foamy, add the grated lemon peel, the flour and finally the beaten egg white. From this mixture, prick round biscuits with a teaspoon, place in hot lard and bake until golden brown. Take them out, drain them and pour the wine soup over them when serving.
