The traditional winery is located in the municipality of Iphofen ( Steigerwald area) in the German wine-growing region of Franconia. The winery has been in the family since 1630. After the Second World War (1939-1945), Hans Wirsching laid the foundation for today's estate. He was largely responsible for naming the best Iphöfer site the Julius-Echter-Berg. From 1966 onwards, it was developed into a leading business in the 14th generation by Dr. Heinrich Wirsching and his brother Hans. In the meantime, the business is managed by Andrea Wirsching and her sister Lena will continue the female leadership. Dr. Uwe Matheus is in charge of operations, and Dr. Klaus-Peter Heigel is the cellar master.

The vineyards cover 90 hectares of vines at the foot of the Schwanberg in the single vineyards Julius-Echter-Berg, Kalb, Kronsberg with Gewann Kammer and Mönchshütte (Iphofen). They are planted with the white wine varieties Silvaner (40%), Riesling, Pinot Blanc, Pinot Gris, Chardonnay, Bacchus, Müller-Thurgau, Scheurebe and Gewürztraminer, as well as with the red wine varieties Pinot Noir, Blauer Portugieser and Dornfelder. In 1952, Hans Wirsching planted one of the first Scheurebe vines in Franconia on the Kronsberg. Since then, the winery has been one of the experts in this grape variety. Natural, environmentally friendly viticulture is consistently practised. Through appropriate measures such as thinning out, yields are greatly reduced in order to increase quality.

In accordance with the VDP classification model, the wide range of products is divided into four levels: Grosse Gewächse, Erste Lagen, Ortsweine and Gutsweine. The grapes, harvested with selective hand-picking, are processed gently. The aim is to produce wines with freshness and effervescence, as well as vintage and varietal character. The winery is a specialist for Franconian dry wines. The white wines are matured in stainless steel tanks, the red wines in the old vaulted cellar, mostly in large wooden barrels. A small part of the white and red wines is also matured in French barrique barrels.

Since 2016, experiences have been exchanged with the partner winery "Kishor" in the western Galilee in Israel as part of the "TWIN-WINERY" initiative. In this context, a kosher Silvaner has been produced since 2016. Sparkling wines, bottle-fermented sparkling wines and noble spirits (marc, mirabelle, WIRGIN) are also produced. The annual production is around 600,000 bottles of wine. The winery is a member of Deutsches Barrique-Forum and VDP (Verband deutscher Prädikatsweingüter).
